The “red” of the Red Sauce is derived from tomatoes which form the base of this sauce. The tomatoes are stewed and pureed , generously flavoured with garlic and herbs like basil , parsley and oregano. The mixture is then gently simmered with a splash of red wine and olive oil. This delectable sauce can be used as an accompaniment to any main dish to add a zing to it.
