Overview, Content & Syllabus

This is a beautifully decorated, strongly flavoured cake, consisting of chocolate and cherries. The cake dough has a dollop of condensed milk added to it before baking , giving it a rich taste and a slightly sticky consistency. After baking, the cake is cooled and cut horizontally, into two sections. A mixture of cream and tinned seedless cherries is spread on the surface of one part and the other portion is placed on top of it. The top of the cake is slathered with rich cream, cherries and chocolate chips. This cake is  moist with the syrup from the tinned cherries. The heaviness of the cocoa and cream is off-set by the burst of freshness from the fruit. Not being too sweet, this is the dessert of choice for those preferring a more subtle mix of flavours.

I have loved cooking from a very early age and learnt from my mother, those little secrets that are passed on from generation to generation. After marriage, I learnt a few more tips from my husband’s family, adding to my repertoire of culinary magic. My husband’s family being Gujarati opened my world to north Indian cuisine, which I’ve cherished cooking for over 25 years now!

Every dish I have made is never by blindly following a recipe. It has always been a labour of love, carefully thought out and incorporating subtle changes to enhance the taste and flavor. In all these years, I have experimented with various cuisines, Indian, of course, but also Chinese, Mexican and Italian, to name a few. Besides the main course dishes, I’ve specialized in chocolates and exotic desserts.

This venture is a culmination of delighting family and friends with interesting and delicious preparations. After much coaxing from them, I have decided to share my culinary secrets with those who see cooking as an art and wish to excel at it.
