This is an eternal favourite that has always held its position in the heart of the chaat lover. Pani Puri consists of three distinct ingredients, all working together to produce that unbeatable taste. The puri is a crisp savoury biscuit, small enough to be eaten in one mouthful. Second, is the filling of the puri. The filling could be of boiled potato or of chana dal or moong dal. All three of these could even be combined to give a twist to the puri. The third and most important part of the pani puri is the piquant pani. The pani of the Pani Puri is truly a stroke of genius! It is spicy and tangy, with a touch of sweet and breath of cumin and ajwain— all the tastes on the tongue — the crispness of the puri, with the slightly bland stuffing dipped in this wonderful pani—– delightful!.

I have loved cooking from a very early age and learnt from my mother, those little secrets that are passed on from generation to generation. After marriage, I learnt a few more tips from my husband’s family, adding to my repertoire of culinary magic. My husband’s family being Gujarati opened my world to north Indian cuisine, which I’ve cherished cooking for over 25 years now!

Every dish I have made is never by blindly following a recipe. It has always been a labour of love, carefully thought out and incorporating subtle changes to enhance the taste and flavor. In all these years, I have experimented with various cuisines, Indian, of course, but also Chinese, Mexican and Italian, to name a few. Besides the main course dishes, I’ve specialized in chocolates and exotic desserts.

This venture is a culmination of delighting family and friends with interesting and delicious preparations. After much coaxing from them, I have decided to share my culinary secrets with those who see cooking as an art and wish to excel at it.
