This truly is a stroke of culinary genius. After tasting this Pani, you are in heaven because every flavour your taste-buds are longing for, has been masterfully combined. Basically, this pani consists of tamarind pulp combined with a rainbow of flavours like coriander, cumin, ajwain, mint and ginger. Jaggery adds that hint of sweetness to the spicy liquid. Since this liquid can be made and stored in advance, pani puri is easy to prepare even at short notice. A true chaat lover’s favourite, this snack allows each distinct ingredient to be tasted on its own, with an explosion of flavours in your mouth.

I have loved cooking from a very early age and learnt from my mother, those little secrets that are passed on from generation to generation. After marriage, I learnt a few more tips from my husband’s family, adding to my repertoire of culinary magic. My husband’s family being Gujarati opened my world to north Indian cuisine, which I’ve cherished cooking for over 25 years now!
Every dish I have made is never by blindly following a recipe. It has always been a labour of love, carefully thought out and incorporating subtle changes to enhance the taste and flavor. In all these years, I have experimented with various cuisines, Indian, of course, but also Chinese, Mexican and Italian, to name a few. Besides the main course dishes, I’ve specialized in chocolates and exotic desserts.
This venture is a culmination of delighting family and friends with interesting and delicious preparations. After much coaxing from them, I have decided to share my culinary secrets with those who see cooking as an art and wish to excel at it.
