It is one of the most popular street foods in India. This dish combines every taste your tongue longs for – the tingling of the chilli is soothed by the sweetness of the chutney and both melt into the wholesome taste of flavoured potatoes and peas. Ragda patties are delectable and come with the added advantage of being healthy too. This is a dish of fried potato patties, topped with cooked dried peas in a gravy, with a smattering of chaat masala, roasted and powdered cumin seeds and chilli powder. The spicy mixture is matched with a green chutney and a sweet chutney and then topped with crisp sev. When you put a ragda patty in your mouth, you first experience the crisp sev which gives way to the meltingly delicious potato, spiked with the sweet and sour of the chutneys. Ragda patties are absolutely irresistible!.

I have loved cooking from a very early age and learnt from my mother, those little secrets that are passed on from generation to generation. After marriage, I learnt a few more tips from my husband’s family, adding to my repertoire of culinary magic. My husband’s family being Gujarati opened my world to north Indian cuisine, which I’ve cherished cooking for over 25 years now!

Every dish I have made is never by blindly following a recipe. It has always been a labour of love, carefully thought out and incorporating subtle changes to enhance the taste and flavor. In all these years, I have experimented with various cuisines, Indian, of course, but also Chinese, Mexican and Italian, to name a few. Besides the main course dishes, I’ve specialized in chocolates and exotic desserts.

This venture is a culmination of delighting family and friends with interesting and delicious preparations. After much coaxing from them, I have decided to share my culinary secrets with those who see cooking as an art and wish to excel at it.
