Overview

Gordon Ramsey, Simon Rogan are all top celebrity chefs in the world but are also owners of their own restaurants where they cook. Being a Chef can be tedious and owning a restaurant can be equally taxing but you as a Chef and an entrepreneur will reap the benefits of how you run you own show. You make your own rules and your own methods but without the basic fundamentals running a successfully and profitability center would prove to be very difficult.
The objective of this course is to guide you on how to run a successful restaurant by having full control of your kitchen as well as your dining area.

Entry requirements

  • The minimum qualification for admission is 10+2 system of Senior Secondary Education or its equivalent with English as one of the compulsory subjects

  • The maximum age limit is 25 years for candidates as on 1st July, 2013

  • The applicant should be medically fit and the same should be certified by a registered medical officer

Duration

The course duration is one year which includes eight months of academic classes and four months of training.

Aim

The overall aim of this course is to provide education to students who aspire to manage, plan and operate hospitality operations. The program helps candidates understand and learn the art of Catering operations. The course also empowers candidate’s tin culinary skills.

Curriculum - Diploma in International Culinary Arts & Enterpreneurship

  1. Introduction to Cookery: In this phase, students learn about the fundamentals of the kitchen with emphasis on cross-utilization of ingredients. An introduction helps to understand which cookery applications and methods will be utilized to suits one’s own establishment

  2. Indian Cookery: The complexity of Indian cookery is emphasized in this. Even if one is interested in opening a continental or ethnic restaurant with the basic of Indian cookery, he/ she can understand the fusion methods to suite the pallet of locals

  3. Bakery and Confectionary: The basic bakery and confectionary with emphasis on variety of desserts is introduced here. As an establishment, one can reduce cost by making one’s own simple breads and innovative desserts

  4. Practical Cookery: All theory is extensively covered in the hands-on practical classes. One learns by doing and practicing in order to reach perfection

  5. Entrepreneurship: This involves all details of successfully running one’s establishment
